Asparagus And Turkey Bacon Quiche With Sweet Potato Crust

This would not only be perfect for a weekend brunch, but it’s also great for meal prepping! It makes six slices, I save my leftovers in the fridge and reheat for breakfast, so easy for busy mornings!

I usually make crustless frittatas, but I got this sweet potato crust idea from Ambitious Kitchen and thought it was genius! It was not only easy to prepare, but the hint of sweetness made the quiche taste amazing. I topped mine with crumbled feta cheese – which is totally optional!

^This is how your sweet potato crust should look. Just slice a sweet potato into thin rounds (about 1/8 inch thick) Spray a 9 inch round baking dish with cooking spray and lay the rounds around the dish – you may need to cut some to fit right like I did. Then you’ll lightly spray the top of the sweet potato crust before baking for about 18 minutes.

Servings 6 slices


  • 1 large sweet potato cut into 1/8 inch rounds
  • 3 slices uncured turkey bacon
  • 12 oz. (about) asparagus trimmed and cut into 2 inch peices
  • 6 eggs
  • 1 tsp olive oil
  • 1/4 cup unsweetened cashew or almond milk
  • 1/4 cup crumbled feta optional
  • 1/4 tsp garlic powder
  • salt and pepper
  • green onion chopped for garnish


  1. Preheat the oven to 375 degrees F. 

  2. Using nonstick cooking spray, grease a 9 inch round baking dish/pie dish. Add the sweet potato rounds to cover the dish (refer to photo) you will have to cut some in half to fit along the sides. Lightly spray again over the sweet potato rounds.

  3. Bake for about 18 minutes. Let cool for a few minutes.

  4. While the crust is baking, cook your turkey bacon then crumble into small pieces and set aside. Add olive oil to the same skillet over medium heat and add your asparagus pieces. Let cook for about 5 minutes.

  5. In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Add asparagus pieces. 

  6. Add the egg/asparagus mixture on top of the cooked sweet potato crust. Sprinkle turkey bacon pieces and crumbled feta. 

  7. Bake for 30-33 minutes or until eggs are set. Let cool for a few minutes and then top with some chopped green onion and enjoy!
