- Yield: 4–5 servings 1x
Ingredients
Red Wine Vinaigrette
1/3 cup olive oil
2.5 tbsp red wine vinegar
1 tsp dijon
1 tsp honey
2 tsp minced shallot
salt and pepper to taste
pinch of garlic powder
3/4 tsp Italian seasoning, or to taste
Salad
1 head romaine, chopped
1/2 a small head of radicchio, or another 1/2 a head of romaine, chopped
4–5 oz salami, chopped
1/2 cup shaved cheese, any works! I used a blend of wine soaked toscano, cheddar and a rosemary cheese.
3–4 pepperoncinis
5 jalapeño stuffed olives, sliced
1/3 cup black olives or olives of choice, sliced
1/4 cup rosemary marcona almonds or nuts of choice
2–3 Persian cucumbers, sliced
1 cup cherry tomatoes, halved
Instructions
First prepare your red wine vinaigrette by whisking together all of the ingredients in a jar or any air tight container. Cover with a lid and refrigerate until ready to use.
Assemble your salad by combining the romaine, radicchio, salami, shaved cheese, pepperoncinis, olives, almonds, cucumbers and tomatoes.
Drizzle on desired amount of dressing (you will most likely have some leftover dressing, just store in the fridge!)
Mix the salad, serve and enjoy!
