Chipotle Cashew Dip

This creamy chipotle cashew dip is the perfect simple, delicious and addictive snack to bring to any party, bbq or get together!

This dip could not be easier. All you need are a few simple ingredients, a food processor OR high speed blender, and some tortilla chips to dip it in.

This is the perfect end of the summer transitional appetizer. It’s great to bring to a BBQ. It’ll also be an amazing addition to football season. You can eat it cold or heat it up, your choice! If you serve it hot it has some queso vibes to it and I’m definitely into it… either way it’s delicious and 100% addicting. The chipotle gives it the perfect subtle smokey and spicy flavor.

Chipotle Cashew Dip



1 cup raw cashews soaked in 1 & 1/3 cup water for 3 hours

2 chipotle peppers from a can in adobo sauce

1 tbsp + 2 tsp of adobo sauce from the canned chipotles

2 tbsp tomato paste

1/4 tsp cayenne

1 garlic clove

2 tsp chili powder

1 tsp paprika

salt to taste

1 lime, juiced

1/3 cup water


Drain your soaked cashews.

Add the cashews, chipotles, adobo sauce, tomato paste, cayenne, garlic, chili powder, paprika, salt, lime juice and water to a food processor or blender.

Pulse/blend until smooth. Taste and add more seasonings or salt if need be.

Serve cold or warm by heating it up – enjoy with tortilla or plantain chips!

Store for up to 6 days in a fridge in an airtight container.
