Coconut Lime Energy Balls

These coconut lime energy balls are the perfect bite when you just need a little something to hold you over! They’re the perfect amount of sweet and tangy – the coconut lime combo makes them great for Summer! All you need are medjool dates (I found them at Trader Joe’s for a great price!), raw almonds, salt, lime, unsweetened shredded coconut, coconut butter OR honey (I used to coconut butter to enhance the coconut-y flavor) and a food processor.

If you’re on the hunt for a new food processor, I attached mine here. I got it at my bridal shower and I never realized how handy it was until I got one! I use it to make so many different types of energy balls/bars, sauces, pesto, dressings, and soups! There’s so many things you can do with it.


Coconut Lime Energy Balls



5 medjool dates – pitted

1/2 cup whole raw almonds

pinch of salt

juice of 1 lime

zest of 1/2 a lime

2 tbsp unsweetened shredded coconut

1 tbsp coconut butter or honey


Add all the ingredients to a food processor and process on high until sticky and blended. If the mixture seems too dry add a pinch more lime juice – but be careful you want them to be firm.

If your mixture seems good – go ahead roll into balls and store in the fridge.


These balls must be kept cold, if bringing to work or on the road make sure they are in a cooler or refrigerated.
