This crockpot spicy sausage queso is the perfect crowd pleasing cheesy dip! Throw everything into the slow cooker then serve with tortilla chips.
Queso is one of my biggest weaknesses. Put a bowl of melty queso in front of me, and I cannot stop dipping chips in it. Also, Texas has the absolute best! So, it’s hard to turn it down. Now you can yourself at home! Very easily to thanks to your slow-cooker!
This crockpot spicy sausage queso would be the perfect dip to serve during the holidays or for football Sunday snacking. You can serve it with salty tortilla chips, plantain chips or Trader Joe’s elote corn dippers. It’s addicting and has just right amount of spice.

Ingredients
8 oz pepper jack cheese, cubed
8 oz monterrey jack cheese, cubed
8 oz cream cheese
1 (10 oz) can diced tomatoes & green chilies, I use Rotel
1/2 cup milk
1/2 tsp garlic powder
1 tsp cumin
salt to taste
1 lb. hot sausage links, casing removed
sliced jalapeño and chopped cilantro for topping, optional
tortilla chips for serving
Instructions
Add sausage to a skillet over medium heat, cook until browned, crumbling it into tiny pieces as it cooks.
Add to a paper towel lined plate to remove excess oil.
Add cubed cheese, cream cheese, diced tomatoes & chilies, milk, garlic powder, cumin, salt and sausage crumbles to the crockpot.
Cover and cook on high for 2 hours, stirring everything half way through cook time.
Top with sliced jalapeño and cilantro if desired and serve warm with chips!
