Everything but the kitchen sink in this fully loaded and delicious turkey taco salad with a homemade cilantro vinaigrette!
I’m being completely honest when I say I could eat a salad like this everyday! You can customize this salad to your own liking. I did romaine lettuce, lean ground turkey cooked in homemade taco seasoning, cherry tomatoes, black beans, corn, tortilla strips, pickled red onion, shredded cheddar cheese, guacamole (I got store bought), and my homemade cilantro vinaigrette. Taco Turkey Meat
1 lb. lean ground turkey meat
2–3 tbsp olive oil
salt and pepper to taste
2–3 tsp chili powder
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp cayenne
Cilantro Vinaigrette (makes about 1/3 cup of dressing)
1/4 cup olive oil
1 tbsp water
1/4 cup cilantro leaves
1/2 lemon juiced
1/2 tsp minced garlic
2 tbsp red wine vinegar
salt to taste
1 head of romaine, chopped
1/2 pint cherry tomatoes, halved
1 can black beans, drained and rinsed
1 can of corn, drained and rinsed
pickled red onion, optional
1/2 cup shredded cheddar cheese
tortilla strips, optional
2 scoops of guacamole or sliced avocado
First, add all the salad dressing ingredients to a food processor or blender and process/blend until everything is combined and smooth. Refrigerate until ready to use.
In a skillet over medium heat add olive oil and ground turkey.
Cook for 6-8 minutes or until turkey is almost cooked through, breaking the meat apart and stirring occasionally.
Add the chili powder, cumin, paprika, garlic powder, cayenne, salt and pepper. Make sure seasoning is mixed in completely and cook for another 2-3 minutes or until turkey is cooked through.
Assemble your salads in two bowls by adding romaine, turkey meat, beans, corn, tomatoes, tortilla strips, onion, cheddar cheese, guac, and/or any other toppings you’d like.
Top with desired amount of cilantro vinaigrette and enjoy!
