Hot Mexican Street Corn Dip

Say hello to this easy and delicious Hot Mexican Street Corn Dip! This easy Tex-Mex dip makes the best party appetizer or snack for your next gathering using just a handful of simple ingredients. This amazing Street Corn Dip is also made lighter with non-fat Greek yogurt and light cream cheese, and can be made using frozen street corn from Trader Joe’s or your own canned corn mix.

I had to post one last recipe that would be great for Cinco De Mayo! This Hot Mexican Street Corn Dip is definitely what you need. With a margarita too. It’s easy and quick to make. You can prep it ahead of time then just pop it in the oven to get it heated up.

I’m clearly a fan of all things Mexican street corn. Moving to Texas probably did that to me. It makes a great side for any taco night. Plus, there’s a ton of things you can do with it! This dip might just be my favorite though. I hope you love this recipe as much as I do!

What if I don’t have a Trader Joe’s near me? Can I make my own street corn for this recipe?

For this corn dip recipe I used Trader Joe’s Frozen Mexican Street Corn to make it a bit easier and time efficient. However, making your own Mexican style street corn is super easy! All you need to do is combine 1 1/2 cups corn kernels (fresh is preferred but if not you can use canned just make sure to rinse and drain)2 tbsp mayo, 2 tbsp plain greek yogurt or sour cream, 1 tsp chili powder, 1/2 tsp paprika and some salt to taste!

Can I substitute anything for the Cotija cheese?

Cotija is best for this recipe but if you can’t buy it where you live feta makes an acceptable substitute. If you’re looking for a project, you could also try making your own!

What should I serve with this Hot Street Corn Dip?

Chips for dipping! I love tortilla chips, plantain chips, or my personal favorite – Trader Joe’s elote corn dippers! If you want to be healthier you can even use celery. If it can scoop up some dip and it goes with Mexican flavors, you can serve it with this dip!

Description

Say hello to this easy and delicious Hot Mexican Street Corn Dip! This easy Tex-Mex dip makes the best party appetizer or snack for your next gathering using just a handful of simple ingredients. Ingredients

1 bag of Trader Joe’s Frozen Mexican Street Corn (see notes)
8 oz  softened cream cheese
5.3 oz plain greek yogurt or sour cream
1 tsp chili powder
1/2 tsp garlic powder
pinch of onion powder
salt and pepper, to taste
2 tbsp crumbled cotija cheese
1 tbsp chopped cilantro
juice of 1/2 a lime
chips of choice, for serving


Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cook frozen Mexican street corn according to package instructions. This should take roughly 6-8 minutes.
  3. While the Mexican street corn is cooking – add softened cream cheese and plain greek yogurt or sour cream to a mixing bowl. Mix to combine.
  4. Add salt, pepper, chili powder, garlic powder, and onion powder. Mix to combine.
  5. Add the cream cheese mix to a small baking dish. Use a rubber spatula to smooth it out. Add the cooked street corn on top.
  6. Top with cotija cheese and bake for 15-17 minutes or until it’s heated through.
  7. Top with fresh chopped cilantro and squeeze the lime over the top of the dip. Serve with chips of choice!

Notes

You can make your own street corn by combining 1 1/2 cups fresh or canned corn kernels with 2 tbsp mayonnaise, 2 tbsp plain greek yogurt or sour cream, 1 tsp chili powder, and 1/2 tsp paprika, before seasoning to taste with salt.
