Lemon Alfredo Pappardelle

This creamy date night Lemon Alfredo Pappardelle pasta recipe with crispy pancetta and peas is the perfect elevated summer pasta dish. It’s rich, creamy and full of delicious flavors – and can be on the table in only 20 minutes!

If you need an at home date night meal, look no further than my Lemon Alfredo Pappardelle! This dish checks all of the boxes. It’s easy and doesn’t call for a ton of ingredients. However, it feels fancy and special (especially off you make something like my Air Fryer Parmesan Cauliflower Gnocchi Dippers to start the meal off!) I love making it during the summer for an easy dinner.

The lemon alfredo sauce is absolutely delicious. Smother it on some perfectly cooked pappardelle with crispy cubes of pancetta and peas then you have yourself an amazing meal. It is one you’ll want to remember for all your future weeknight pasta dishes. Best served with a side salad (keep it simple with some dressed lettuce, or you could try my Panzanella Burrata Salad with Pesto Vinaigrette for something a bit more substantial) and some wine.

All you need for this pasta recipe is pappardelle. I get mine at Trader Joe’s. Then you will need some heavy cream, butter, lemon, grated parmesan, garlic, peas, and cubed pancetta. Fresh Italian parsley is also a great addition to this meal.

What if I can’t find pappardelle?

I love how the rich creamy sauce clings to the wide pappardelle noodles, so if you can’t find them tagliatelle would make a good substitute. If you prefer shapes to noodles, rigatoni or penne shapes would work best here.

Can I use frozen peas for this recipe?

I used fresh English peas for this recipe. However, frozen peas will work just fine! Just make sure to defrost them.

Lemon Alfredo Pappardelle


Description

This creamy date night Lemon Alfredo Pappardelle pasta recipe with crispy pancetta and peas is the perfect elevated summer pasta dish. It’s rich, creamy and full of delicious flavors – and can be on the table in only 20 minutes!


Ingredients

  • 8 oz. pappardelle
  • 6 oz. English peas
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 1 1/2 cups heavy cream
  • 1 cup grated parmesan, plus more for topping
  • 1 lemon, juiced and zested
  • 4 oz. chopped pancetta, cooked until crispy (see note
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil the pappardelle in salted water according to the package’s instructions. Within the last 3 minutes of boiling the pappardelle, add the peas. Drain the pasta and peas and rinse with cold water. Set aside.
  2. In a stock pot or large skillet, melt the butter over medium heat.
  3. Add the garlic, salt and pepper. Let cook for 1 minute, stirring frequently.
  4. Whisk in the heavy cream. Then add the grated parmesan. Whisk until smooth and creamy. Reduce heat to medium low and let thicken for about 5 minutes, whisking occasionally.
  5. Add lemon juice and zest.
  6. Mix in the pappardelle, peas, cooked pancetta and chopped parsley. Toss to coat and remove from heat.
  7. Serve with more grated parmesan and enjoy!

Notes

To cook the pancetta add the pieces to a hot, non-stick frying pan with just a dash of olive oil. Cook on high until the pieces are crispy and set aside on a piece of kitchen paper to soak away all the excess fat.
