I recently became a Costco member again! We took a long break but I figured it was time again. I’ve been seeing other people post about great new products they’ve been getting! A lot of healthier options too.

A product I have been longing from there is the Cuisine Solutions Sliced Grass-Fed Beef Sirloin [3]! It’s thin-sliced steak that comes fully cooked using the sous vide method. You can heat it up really quick in a skillet to eat it warm with some veggies. We do this a lot for a quick and easy dinner and top it with some balsamic glaze. It’s so delicious.

Some other great things you can do with it are add it to a flatbread. I’ve been making Philly cheesesteak flatbreads with it! Also, my husband loves it on a sandwich with some horseradish sauce.

And you can’t forget quesadillas! Open-faced quesadillas in particular have been my jam lately. They’re basically Mexican pizzas. Click here for my open-faced shrimp quesadillas [4]. They are so incredibly easy to make, and even easier to eat. I love using Cuisine Solutions’ Sliced Grass-Fed Beef Sirloin for these because it’s already cooked! This makes things so much easier for me. Since open-faced quesadillas don’t need to cook long, you don’t have to worry about the steak being over-cooked.

Ingredients

2 tortillas, I used flour

34 tbsp enchilada sauce

4 oz. Cuisine Solutions sliced beef sirloin, cut into bite size strips, or more/less to taste

1/4 cup corn

1 jalapeño, seeds and ribs removed, sliced or chopped

1/2 cup shredded monterey jack or pepper jack cheese

1 tbsp fresh chopped cilantro, optional

lime wedges for squeezing, optional


Instructions

Preheat the oven to 475 degrees F and line a baking sheet or lightly spray with non-stick spray.

Place tortillas on baking sheet and bake for about 3 minutes.

Evenly spread on enchilada sauce, then sprinkle the cheese.

Top with corn, jalapeño and beef sirloin.

Bake for 5-6 minutes or until cheese is melted and tortilla edges are golden and crisp.

Top with cilantro and squeeze on some lime if desired.

Cut into tortilla into 4 slices and enjoy!
