Looks like I’m baking again! I told myself I wasn’t going to create anymore baked good recipes for my blog. I find them to be a bit more time consuming. Also, I just don’t feel like I’m as good at baking compared to cooking.
But, this quarantine has brought out the baker in me! It’s actually been very therapeutic for me. I’ve made cookies, blondies and a couple banana breads! I decided to take an older banana bread recipe [3]on my blog and tweak the base a bit. Then I just smothered it in marshmallows, chocolate chips and graham cracker pieces. Then I broiled it for two more minutes and created this delicious peanut butter s’mores banana bread!
What you need for this recipe:
Ripe bananas, oat flour (or just blend old-fashioned oats!), vanilla extract, cinnamon, baking soda, an egg, all natural creamy peanut butter, honey, mini marshmallows, chocolate chips, and graham crackers!
The key is to use very ripe bananas! The more ripe they are, the better! They’re much more sweet and they blend better this way.
How to quickly ripen your bananas:
Take your bananas with the peel still on them and place them on a baking sheet. Bake them at 250 degrees F for 15-25 minutes or until they look browned and are softened! And then you have yourself some ripe bananas. No need to wait days for them to ripen on your counter.

Ingredients
3 ripe bananas
1 tsp vanilla
1/4 cup honey, maple syrup will also work
1/2 cup natural creamy peanut butter
1 egg
1 & 1/2 cups oat flour
1 tsp cinnamon
1 tsp baking soda
1 cup chocolate chips, divided
mini marshmallows to taste
2 graham crackers, broken up into small pieces, gluten-free if desired
Instructions
Preheat oven to 350 degrees F.
Line a loaf pan with parchment paper to make a lengthwise overhang on each long side of the pan. Spray with non stick cooking spray.
In a stand mixer or using a blender mash the ripe bananas until smooth.
Combine with vanilla, honey, nut butter. Whisk in the egg.
Add oat flour, cinnamon and baking soda. Mix in 3/4 cup of the chocolate chips.
Add mixture to loaf pan. Bake for 40-45 min or until golden on the top and cooked through. I always check by using a toothpick.
Top with marshmallows, 1/4 cup more chocolate chips and graham cracker pieces. Bake for 3-5 more min or until marshmallows are a bit charred.
Let cool at least 10-15 mins! VERY important or it will be so messy and fall apart as you remove and cut it! Once completely cooled, cut into slices and enjoy!
