There’s few things I love more than an easy sheet pan meal. They’re quick and make clean up super minimal. Which is what makes them the ideal week-night meal. But, the key is to make them delicious and packed with flavor. Like this salmon and potato one right here. The salmon is flakey and baked to perfection. Also, it’s seasoned just right. The fingerling potatoes are coated in a handful of seasonings and grated parmesan. Then I topped everything will some fresh dill, lemon, and served it with a creamy tartar sauce. So delicious!

This meal comes together in no time. Plus, it’s so well balanced. But, if you want some greens in there for an even bigger healthy bonus, I suggest a nice side salad with some spring mix or arugula. This would really pull the meal together. However, even without a salad I find it very satisfying and filling. I’ve been trying to eat more salmon lately because it’s such a great protein! Lemon dill tartar sauce
3/4 cup mayo
3 tsp dill pickle relish
1 tbsp lemon juice
1/2 tbsp fresh chopped dill
1/2 tsp dijon
pinch of garlic powder

salt and pepper to taste
Fingerling potatoes
1/2 lb fingerling potatoes, halved lengthwise
1 tbsp olive oil
1/2 tsp dried oregano
1/2 tsp garlic powder
salt and pepper to taste
2 tbsp grated parmesan
Salmon
2 salmon filets
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp dried oregano
1/2 tsp garlic powder
salt and pepper to taste
2 tbsp fresh chopped dill
lemon wedges for serving


Instructions

Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.

Make your lemon dill tartar sauce by combining the mayo, pickle relish, lemon juice, dill, dijon, pinch of garlic powder, salt and pepper in a small mixing bowl. Cover and refrigerate until ready to use.

In a large mixing bowl combine fingerling potatoes, 1 tbsp olive oil, 1/2 tsp dried oregano, 1/2 tsp garlic powder, salt and pepper. Mix well to coat the potatoes.

Arrange the potatoes in a single layer on one side of the baking sheet.

Bake for 15-16 minutes.

Meanwhile, brush on 1 tbsp of olive oil on both of the salmon filets.

In a small mixing bowl combine smoke paprika, 1/2 tsp dried oregano, 1/2 tsp garlic powder, salt and pepper.

Rub the seasoning blend evenly on each salmon filet. Add seasoned salmon to the other side of the baking sheet.

Toss around the potatoes then sprinkle them with the grated parmesan.

Bake for 12-13 minutes or until salmon is cooked through.

Top with fresh dill and lemon wedges. Serve with the lemon dill tartar sauce.
