Easy shrimp Caesar salad with air fried chickpeas makes for the perfect healthy lunch. Packed with protein and delicious flavors!

It’s pretty clear that I love a good salad and a good shrimp recipe! Then putting the two together makes for a match made in heaven. I love succulent red Argentine shrimp over a bed a of crisp greens! The addition of air fried crispy chickpeas, shaved parmesan, cucumber, ripe avocado and Caesar dressing is just the right combination. When I make this salad, there are definitely never any leftovers.

Unlike some of my other salad recipes, there is no homemade dressing being used here. When it comes to Caesar, I buy mine from the store. However, I try to find healthier alternatives. For this specific recipe I used Trader Joe’s new vegan Caesar. I’m obviously not vegan, but I wanted to give it a try. I absolutely love it! The ingredients are very clean too. So that is a huge plus. Primal Kitchen [3] also makes a great healthier caesar dressing. However, I’d advise you to use whatever your favorite one is! If you have a homemade recipe you love, feel free to go with that!

However, croutons aren’t always something I wanted to add in. The air fried chick peas are so easy to make. With that being said, I’ll be adding this topping to a lot more of my salads!

Ingredients
Salad
1 lb. shrimp, deveined and defrosted if frozen, I used red ArgentineÂ
2 heads romaine, chopped
1/3 English cucumber, sliced and quartered
1 avocado, sliced
2 tbsp shaved parmesan, optional
2 tbsp Trader Joe’s vegan caesar dressing, or to taste, or use any Caesar dressing
Salt and pepper to taste
Pinch of garlic powder
1/2 tsp paprika
1 tbsp avocado or olive oil
Air Fried Chickpeas
1 (15.5) oz. can chickpeas, rinsed and drained
1 tbsp avocado or olive oil
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp parsley flakes
1/2 tsp paprika
Instructions
First make the air fried chickpeas by combining all the ingredients in a mixing bowl.
Add to air fryer basket and cook at 380 degrees F for 12-14 minutes, or until crispy enough to your liking. Tossing half way through.
Pat dry your shrimp and season with salt, pepper, garlic powder and paprika.
Add oil to a skillet over medium high heat and add the shrimp in a single layer.Â
Let cook about 2-3 minutes per side or until cooked through.
Remove from heat and set aside.
Assemble salads by combining romaine, cucumber, air fried chickpeas, avocado, shrimp and shaved parmesan. Add more cracked pepper if desired.
Drizzle with caesar dressing and enjoy!
