Something about quarantine brought out the baker in me! I really thought I retired from baking last year. I didn’t develope any new recipes or really bake in general for a while. However, lately it’s been so therapeutic for me. Especially, banana bread! I feel like it’s always so good and comforting. Plus, I always have ripe bananas sitting on my counter top so why not? My husband is definitely thrilled about it. His sweet tooth is always happy to see some baked goods.

Strawberry Banana Bread With Homemade Frosting

I wanted to make a Spring time inspired banana bread and I thought adding strawberries would be perfect. The frosting is the perfect addition. I made my own using just strawberry purée (blended strawberries in my Vitamin), powdered cane sugar and melted butter. You could also use cream cheese instead of butter and make a cream cheese strawberry frosting! That sounds delicious too.

I made my frosting in my kitchen aid mixer using the paddle attachment. It was so quick and easy! However, feel free to use store bought frosting if you want to skip this step or don’t have the right kitchen gadgets for it. Either way it will be delicious.

Easy Strawberry Banana Bread - Dash Of Mandi

What you need for this recipe:

Ripe bananas, eggs, honey, vanilla extract, almond extract (optional but recommended), plain greek yogurt, flour (all purpose or 1:1 gluten-free flour), baking powder, baking soda, salt, cinnamon, and strawberries. Parchment paper, non-stick spray and a loaf pan will also be necessary!

For the frosting you will need strawberry purée, powdered sugar and butter. Or just get store bought strawberry frosting 😉 you will also need a mixer to make the frosting. As well as a blender to purée the strawberries.

Strawberry Banana Bread


Ingredients

Banana Bread
3 ripe bananas, mashed
2 eggs
1/3 cup honey
1/3 cup plain greek yogurt
1 tsp vanilla
1/2 tsp almond extract, optional but recommended
1 tsp cinnamon
pinch of salt
1 & 3/4 cup all purpose flour, or 1:1 gluten-free flour
1/2 tsp baking powder
1/2 tsp baking soda
1 cup chopped strawberries
Frosting
1/4 cup puréed strawberries
1/2 stick softened butter
1.5 – 2 cups powdered sugar


Instructions

Preheat the oven to 350 degrees F.

Line a loaf pan with parchment paper to make a lengthwise overhang on each long side of the pan. Spray with non stick cooking spray.

In a large mixing bowl combine your mashed bananas with honey, greek yogurt, vanilla, and almond extract. Whisk in your eggs and mix to combine.

Slowly mix in your flour and combine.

Add cinnamon, salt, baking powder and baking soda.

Add in the strawberries and mix everything then pour batter into loaf pan.

Bake for 45-55 minutes or until cooked through (I check with a toothpick), the top should be golden.

If you’re making your own frosting – in a stand mixer with the paddle attachment add strawberry purée and butter. Mix then slowly add in powdered sugar. Slowly mix until smooth and creamy. Store in the fridge until ready to use.

Let cool for at least 20 minutes before topping with frosting and slicing.
