Super easy, fresh and delicious Trader Joe’s fajita salad. Using their pollo asada, frozen pepper mix, and green goddess dressing!

One of my favorite summer meals is a big, loaded salad! Loaded with all of the delicious toppings. There’s so many options. I always lean towards a Mexican or taco inspired salad. This fajita salad was the perfect cure to my cravings. It makes for the perfect lunch or easy week-night dinner. Also, this fajita salad is great for meal-prepping! Everything can be found at Trader Joe’s. Their pollo asada from the meat section is so delicious! You can either bake it or grill it. I baked mine at about 400 degrees F for 25 minutes. It came out great. However, you can never go wrong with grilling this time of year.

What you’ll need for this recipe:

One pollo asada, romaine lettuce, 1 bag of frozen fire roasted bell peppers and onions, green goddess dressing, avocado, shredded pepper jack cheese, and cilantro. Jalapeño slices are optional!

Trader Joe’s Fajita Salad

Ingredients

1 Trader Joe’s pollo asada,  grilled or baked then cut into slices

2 heads of romaine, chopped

1 bag Trader Joe’s frozen fire roasted bell peppers and onions, cooked

1/3 cup shredded pepper jack cheese

1/2 avocado, thinly sliced

2 tbsp chopped cilantro

jalapeño slices, optional

23 tbsp green goddess salad dressing, or to taste


Instructions

Assemble salads by combining all of the ingredients in a large bowl. Drizzle with dressing and enjoy!
