Asparagus And Turkey Bacon Quiche With Sweet Potato Crust

Servings 6 slices

Ingredients

  • 1 large sweet potato cut into 1/8 inch rounds
  • 3 slices uncured turkey bacon
  • 12 oz. (about) asparagus trimmed and cut into 2 inch peices
  • 6 eggs
  • 1 tsp olive oil
  • 1/4 cup unsweetened cashew or almond milk
  • 1/4 cup crumbled feta optional
  • 1/4 tsp garlic powder
  • salt and pepper
  • green onion chopped for garnish

Instructions

  1. Preheat the oven to 375 degrees F. 

  2. Using nonstick cooking spray, grease a 9 inch round baking dish/pie dish. Add the sweet potato rounds to cover the dish (refer to photo) you will have to cut some in half to fit along the sides. Lightly spray again over the sweet potato rounds.

  3. Bake for about 18 minutes. Let cool for a few minutes.

  4. While the crust is baking, cook your turkey bacon then crumble into small pieces and set aside. Add olive oil to the same skillet over medium heat and add your asparagus pieces. Let cook for about 5 minutes.

  5. In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Add asparagus pieces. 

  6. Add the egg/asparagus mixture on top of the cooked sweet potato crust. Sprinkle turkey bacon pieces and crumbled feta. 

  7. Bake for 30-33 minutes or until eggs are set. Let cool for a few minutes and then top with some chopped green onion and enjoy!
