Baked Pumpkin Spice Donuts


  • 1 cup oat flour
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp pumpkin pie spice optional but recommended
  • 1/2 tsp salt
  • 1/3 cup coconut sugar
  • 1/2 cup organic pumpkin puree
  • 1/4 cup unsweetened nut milk I used cashew milk
  • 1 egg
  • 1/4 tsp vanilla extract


  1. Preheat your oven to 350 degrees F

  2. In a large mixing bowl, combine your oat flour, coconut sugar, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt. 

  3. Whisk in your egg, vanilla, and nut milk, then gently stir in your pumpkin puree. Stir everything together, but be sure not to over mix. 

  4. Use a pastry bag or make your own using a large plastic bag to pipe the donut mix into a lightly greased donut pan (I greased mine with coconut cooking spray)

  5. Bake for 15-20 minutes.

  6. Let the donuts cool for about 5-6 minutes.. enjoy!
