Cajun Salmon Sheet Pan Meal

Ingredients

spicy tartar sauce
1/2 cup mayo
2 tbsp dill pickle relish
1 tsp lemon juice
1-2 tbsp hot sauce
1/2 tsp Cajun seasoning
salt to taste
potatoes
1 lb baby gold potatoes, cut into small pieces
1 tbsp olive
1/4 tsp garlic powder
pinch of smoked paprika
salt and pepper to taste
zuccchini
1 zucchini, cut into half moon shapes
1 tsp olive oil
pinch of garlic powder
salt and pepper to taste
salmon
3-4 salmon filets, about 1 lb total
1 tbsp olive oil
2 tsp Cajun seasoning
1 tbsp brown sugar
1/4 tsp smoked paprika
pinch of garlic powder
chopped parsley, optional
lemon wedges for serving


Instructions

Preheat the oven to 400 degrees F and line a large baking sheet with foil or baking parchment.

Meanwhile, prep your tartar by combining all ingredients. Taste and adjust seasonings/hot sauce if need be. Cover and refrigerate until ready to use.

In a bowl toss together potatoes, oil, garlic powder, smoked paprika, salt and pepper. Toss to combine and coat the potatoes.

Add the potatoes to the baking sheet and bake for about 10 minutes.

Meanwhile, in a bowl combine zucchini, oil, garlic powder, salt and pepper. Toss to combine.

Add to the baking sheet in a single layer with the potatoes and bake for 5 minutes.

Remove from the oven and add the salmon filets in the center of the baking sheet. Brush on olive oil.

In a small bowl or ramekin combine Cajun seasoning, brown sugar, smoked paprika and garlic powder. Mix to combine then evenly sprinkle each salmon filet with the seasoning/sugar mixture.

Bake for 10 minutes or until salmon is cooked through.

Top with parsley and serve with lemon wedges and the spicy tartar. Enjoy!
