This recipe is basically the Trader Joe’s version of my easy enchilada casserole [3]. It’s almost exactly the same but it might even be easier. Also, it calls for less ingredients. I truly love Trader Joe’s cowboy caviar. It has such great smokey and spicy flavors that go so nicely in this casserole. This cowboy caviar casserole is great for week-night dinners. As well as leftovers for lunch!

Cowboy Caviar Casserole Ingredients

Feel free to substitute the ground beef for ground turkey or ground chicken. The toppings is where you can really have fun with this casserole. I love sliced avocado, lime wedges, and chopped cilantro. However, sour cream is always great if you need something to balance the heat. I don’t find this dish too spicy. But, I know everyone has different heat tolerances. Some would even want some hot sauce drizzled on their portion.

Cowboy Caviar Casserole


Ingredients

1 lb ground beef
1 tbsp olive oil
½ cup yellow onion, diced
½ tsp garlic powder
1 tsp ground cumin
1 tsp chili powder
½ tsp paprika
Salt and pepper
12 oz. jar enchilada sauce, divided
13 oz. jar cowboy caviar
1 & ½ cups shredded pepper jack or Mexican cheese blend, divided
4 (8 inch) flour tortillas
Optional Toppings:
Chopped cilantro
Lime wedges
Sliced avocado
Sour cream


Instructions

Preheat the oven to 375 degrees F.

In a skillet over medium heat add ground beef. Season with salt and pepper and cook until browned, crumbling it as it cooks. When it’s almost all the way browned add the garlic powder, ground cumin, chili powder and paprika. Coat beef in seasonings. Remove beef from heat and set aside.

Add olive oil to the skillet over medium heat and add the onion. No need to wipe the pan clean. Cook for 3-4 minutes.

Add beef back into the skillet with cowboy caviar and 1 cup of the enchilada sauce. Let simmer for 2 minutes.

Add ½ of the beef mixture on a rectangular baking dish. Followed by ½ cup shredded cheese and 2 tortillas. 

Add the other ½ of the beef mixture followed by ½ cup cheese, 2 tortillas,½ cup enchilada sauce and then the final ½ cup of cheese.

Cover with foil and bake for 30 minutes.

Remove foil and cook for another 6-7 minutes or until bubbly and cheese is melted.

Cut into 6 square pieces and serve with desired toppings.
