Easy Trader Joe’s pineapple shrimp stir fry! All you need is a handful of ingredients to make this tropical inspired meal.
This is one of my new favorite Trader Joe’s meals! If you are new to my blog – I create a variety of easy and healthy-ish recipes. But, a lot of them I like to make using all Trader Joe’s products. I find these recipes to be easiest for busy people! Their products are so good that all you need is a handful of them to create a delicious home-cooked meal. This one is SO easy!
What you need for this recipe:
Shrimp – I use the frozen red Argentine shrimp. They are my favorite frozen shrimp. They have a lobster taste to them, in my opinion.
Trader Joe’s Island soyaki sauce/marinade – I love this stuff!
Diced pineapple
Diced bell pepper
Sliced green onion
Cornstarch or arrowroot powder. Trader Joe’s doesn’t sell arrowroot powder. But, most other stores do. You can also buy it on amazon [3]. Corn starch or arrowroot will work in this recipe, both will thicken the sauce and give it that sticky texture!

I served my pineapple shrimp over leftover sticky rice from take-out! You could use white rice, brown rice, cauliflower rice, or quinoa. But, you’ll definitely want to serve it over something to make it a meal. Also, the rice is so good with the leftover sauce!

- Yield: 2 servings 1x
Ingredients
1 lb. shrimp, defrosted if frozen
1 cup pineapple, diced
1 red bell pepper, chopped
1 tbsp green onion, sliced
2 tbsp olive oil, divided
3/4 cup Island soyaki, or more/less to taste
1 tsp cornstarch or arrowroot powder mixed with 1 tbsp cold water
Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add peppers and cook for 4-5 minutes or until softened.
Add pineapple and cook for 2 more minutes, stirring frequently.
Remove peppers and pineapple and set aside.
Add the other tbsp of olive oil the skillet. Turn heat to medium high.
Season the shrimp with salt and pepper then add to the skillet in a single layer. Let cook for about 2 minutes per side or until they are cooked through.
Add the soyaki sauce, peppers and pineapple. Mix and reduce heat to low, cook for a few minutes tossing everything together.
Slowly pour in the cornstarch or arrowroot mixed with water, mixing everything as you pour it in.
Mix until everything is thickened and evenly covered, should only take about a minute. Add green onion and mix once more.
Serve over rice if desired and enjoy!
