Place your chopped kale in a bowl and squeeze your lime juice over it. Massage the kale for about 3-4 minutes (it'll reduce in size)
Next add your toppings (pumpkin seeds, cherry tomatoes, tortilla strips, cilantro, & corn) combine everything then add your avocado slices. Drizzle desired amount of caesar dressing, mix well, add more fresh lime juice if desired and enjoy!
