Mexi-Kale Caesar Salad

Kale massaged with fresh lime juice with all the Mexican inspired toppings you love! This Mexican lime kale caesar salad is such a unique fun twist on the classic caesar salad!

I’m not usually a kale person.. to be honest it’s one of my least favorite leafy greens UNLESS it’s massaged in oil or something delicious. I keep seeing kale caesar salads at restaurants, which inspired me to try my own. I was also craving some Mexican food, so I thought why not combine the two??

You can easily turn this into a meal by adding some protein like blackened shrimp or grilled chicken. But, for me this was just a little side salad. It was delicious and super easy to make thanks to the minimal ingredients.

I used Primal Kitchen’s caesar dressing. I’m usually all about making my own dressings, but sometimes I just like to have some ready to go in my fridge. Primal Kitchen’s dressing are one of the few brands that I buy. They use avocado oil, and they’re dairy free, sugar free, and paleo approved! SO amazing.

This is a very wholesome and healthy meatless salad. Without the tortilla strip it could also be gluten-free.

Mexi-Kale Caesar Salad

Ingredients

  • 6 cups kale leaves chopped-lightly packed, ribs removed
  • 1 lime juiced
  • 1 avocado thinly sliced
  • 1/4 cup pumpkin seeds
  • 2/3 cup cherry tomatoes halved
  • 1/4 cup tortilla strips
  • 1/3 cup whole kernel corn cooked
  • caesar dressing to taste - I used Primal Kitchen's
  • 1/4 cup cilantro leaves chopped

Instructions

  1. Place your chopped kale in a bowl and squeeze your lime juice over it. Massage the kale for about 3-4 minutes (it'll reduce in size)

  2. Next add your toppings (pumpkin seeds, cherry tomatoes, tortilla strips, cilantro, & corn) combine everything then add your avocado slices. Drizzle desired amount of caesar dressing, mix well, add more fresh lime juice if desired and enjoy!
