Brussel Sprout Gratin

This lightened up brussel sprout gratin is what side dish dreams are made of! It’s definitely a crowd pleaser. How could you go wrong with brussel sprouts and cheesy goodness? It’s comfort food at it’s finest.

There’s no heavy cream or breadcrumbs in here. I feel like there’s enough of that with your other holiday sides! I wanted something delicious, cheesy, but not overly rich. This was exactly what I was looking for. It’s still very satisfying and filling. Also, I can never get enough of brussel sprouts. They’re so good this time of year. I can’t help but grab a bag or two of them every time I go to the grocery store.

For this recipe, I used a blend of gruyere and Swiss cheese. However, just basic shredded gruyere will also do the trick! 

Why buy cheese from the block and shred it yourself?

Pre-shredded bagged cheeses tend not to melt as well! Buying a block yourself and shredding it at home is the way to go with recipes like this. You want the cheese melty and gooey. It only takes a little extra time and is so worth it.

Cheesy Brussel Sprout Gratin

This dish belongs on every Thanksgiving, Friendsgiving, or holiday party table. It goes perfect with my Thanksgiving salad [3] (it’s so refreshing, and compliments all the other rich and hearty dishes), Fall bruschetta on sweet potato crostini [4], and my healthier apple crisp [5] to top it all off. Bring on all the yummy Fall recipes. There’s no wonder this is my favorite time of year.

I’m so excited for Thanksgiving food. Stuffing is one of my favorite things ever. Also, mashed potatoes.. YUM. Oh, and don’t forget the pumpkin pie.

Trader Joe’s sells a cauliflower gratin that is out of this world. It’s such an easy side dish – it’s pre-made so all you have to do is throw it in the oven real quick. I’m all about having a few EASY pre-made things to have on hand when entertaining. As much as I’d love to make every little thing from scratch, sometimes you have to give yourself a little break. It helps you focus on making the homemade dishes extra delicious, like this brussel sprout gratin 😉

In other words, go ahead and add this to your Thanksgiving menu because it’s so easy to make AND even easier to eat. Nothing brings family and friends together like some good, cheesy comfort food.

Lightened Up Brussel Sprout Gratin

2 lbs. brussel sprouts, trimmed and halved
9–10 oz. gruyere cheese, shredded*
2 shallots, minced
2 tsp garlic, minced
1 tsp fresh thyme, finely chopped
salt and pepper to taste
2 tbsp butter
1 tbsp olive oil
1 tbsp flour
1/2 cup half and half


Instructions

Preheat the oven to 400 degrees F and spray a small/medium baking dish with nonstick spray.

Season brussel sprouts with salt and pepper then toss with olive oil. Add them to the baking dish and bake for about 13 minutes.

Heat a medium skillet to medium heat and add the butter.

Once melted add the minced shallot with some salt and pepper – let cook for 2-3 minutes, stirring frequently.

Add thyme and garlic and let cook for about 30-40 seconds, stirring frequently, be careful not to burn the garlic.

Whisk in the flour, and mix to combine. 

Whisk in the half and half and mix until smooth.

Reserve 1 cup of the shredded cheese for topping – slowly add the rest of the cheese to the skillet and whisk in with the mixture. 

Once creamy and smooth, toss in the cooked brussels sprouts in the skillet and evenly coat them.

Transfer everything back to the baking dish and top with the remaining shredded cheese.

Bake for 16-18 more minutes and broil for 1 minute.

Serve and enjoy!

Notes

*I used a little bit of gruyere and swiss, but just gruyere will work fine!

*pre-shredded bagged cheeses don’t melt as well as when you buy a block and shred it yourself!
