Pumpkin Butter Brie Bites

Appetizer recipes are one of my favorite recipes to make. Especially when approaching the holidays. They remind me of being together with friends and family, celebrating and all that good stuff. These little pumpkin brie bites would be great for Thanksgiving, Friendsgiving, game day snacking, or any fall festivities you have going on this season. They are so easy to throw together. Also, they are the perfect bite size snack for sharing.

For these pumpkin butter brie bites you will need Trader Joe’s sweet and savory lightly spiced pumpkin butter. Really any pumpkin butter will work. But, I did love this sweet and savory one for this specific recipe. Also, you will need brie cheese. I love the mini brie bites from Trader Joe’s. Puff pastry, candied pecans, and fresh thyme will also be used to make these bites.

Pumpkin Butter Brie Bites

Ingredients

2 sheets of frozen puff pastry, thawed in the refrigerator overnight
Trader Joe’s sweet and savory lightly spiced pumpkin butter, or any pumpkin butter
10 oz brie, cut into small bite size pieces
1/2 cup candied pecans, roughly chopped
1 tbsp thyme leaves


Instructions

Preheat the oven to 375 degrees F and spray two muffin tins, if you only have one muffin tin you will have to work in batches.

Cut each sheet of puff pastry into 12 squares.

Add each square to a muffin tin cavity.

Add a bite size piece of brie to each puff pastry. If using the tiny brie bites from Trader Joe’s you will want to cut each brie bite into thirds or fourths.

Add the pumpkin butter. I did about 1/2 a tbsp in each one and found it to be the perfect amount.

Add chopped candied pecans and bake for 16-18 minutes or until the pastry is browned and crispy on the edges. If you’re cooking both batches at the same time, place the muffin tins on the top two baking racks in the oven and then alternate them half way through cook time.

Top with fresh thyme leaves and let the bites cool slightly before removing and serving.
