It’s no secret, I love Trader Joe’s. It’s where I do 90% of my grocery shopping because their stuff is affordable and they carry a lot of organic food. They also carry tons of unique products and pre-made foods that can be used in a quick/ minimal ingredient dinner. Such as their cauliflower crust, sauces, cauliflower gnocchi, sweet potato gnocchi, raviolis, everything seasoning, dips, pre-chopped and seasoned veggies. I can go on forever.. the options are endless. But, I want to help you guys throw together easy and delicious week-night meals with these ingredients.

If you don’t have a Trader Joe’s near you (first of all I’m sorry because if it were up to me we’d all have one nearby), A LOT of these ingredients you can find at another store or substitute it with something similar.

So, for my first recipe – I used Trader Joe’s frozen cauli-crust pizza (the one with no toppings) and their frozen red argentine shrimp, I made this delicious, cheesy shrimp scampi pizza!

Shrimp Scampi Cauli-Crust Pizza


Ingredients

1 frozen cauliflower crust (with no toppings)

1/2 lb shrimp, I use the frozen red argentine shrimp (they’re deveined/with tails off)

1 cup shredded mozzarella cheese

2 juiced lemons

zest from 1 lemon

2 tbsp grated parmesan

2 tsp minced garlic

2 tbsp olive oil

1 tsp dried basil

pinch of red pepper flakes, optional

fresh chopped parsley for topping, optional

salt & pepper to taste


Instructions

First, defrost your shrimp then season them with a pinch of salt and pepper.

Start to cook your cauliflower crust, the one from Trader Joe’s has the directions on the box – you bake it on baking sheet at 450 for 10-12 minutes on each side before topping it.

While the crust is baking, add the olive oil to a large skillet over medium heat. Add garlic, lemon juice and lemon zest, cook for 30 seconds to a minute.. stirring frequently. 

Add the shrimp and cook for 1-2 minutes on each side. They should be cooked through but not over-cooked because they will cook longer when they’re being baked on the pizza. 

Remove skillet from heat. Once the crust is done baking (before toppings), spoon the lemon/olive oil sauce from the skillet onto the crust evenly. You just want a very thin layer.. the cauli-crusts can get soggy with too much liquids. 

Top with shredded mozzarella then evenly distribute the shrimp on top. Sprinkle with parmesan, dried basil, and red pepper flakes. 

Bake according to box directions. I usually broil mine for 4-5 minutes or until it starts to bubble. 

Top with fresh chopped parsley if desired and cut into slices and enjoy!
