Whipped Ricotta Bruschetta Dip

This delicious Whipped Ricotta Bruschetta Dip is the perfect no cook appetizer served with crostini! This easy ricotta dip is a crowd pleaser and so addictive topped with fresh marinated tomatoes and basil – and it is ready in just 15 minutes!

This Whipped Ricotta Bruschetta Dip would be great for serving at a holiday get together. I’m sure it would be gone in no time. Also, I think it’s a recipe that’s great for enjoying for a girl’s night, date night at home, football Sunday snack and so much more.

It’s flavorful and fresh. But, it’s also very filling and satisfying. I think it would be great served at the start of an Italian-inspired dinner party followed by my Butternut Squash Ravioli with Sage Butter [3] or my Italian Bomba Rigatoni [4].

I love traditional bruschetta. But, there is something about how it tastes over creamy whipped ricotta that adds such a good touch. Pair it with some crispy homemade crostini and you have yourself the ideal dip! You can even top it with some balsamic glaze. However, without it is still full of flavor.

What you will need for this recipe:

Tomatoes (I used Campari tomatoes but Roma tomatoes will also work), garlic, good olive oil, balsamic vinegar (the nice thick kind), fresh basil, a Ciabatta baguette, whole milk ricotta, runny honey, dried oregano, and a little bit of salt and pepper!

Can I make this Whipped Ricotta Bruschetta Dip ahead?

The ricotta is best enjoyed just after whipping, but you can make the bruschetta topping up to a day ahead and keep it in the fridge – just bring it up to room temperature before serving. You can make the crostini a couple of hours ahead too!

What can I serve with this Bruschetta Dip instead of crostini?

If you don’t want to make the crostini you can always serve this dip with store bought Italian-style crackers, dippers or chips. Or you could go the extra mile by making your own [5]! Alternatively, for a low carb / gluten-free option celery sticks would also be good with this.

Ingredients

Crostini

  • 1 ciabatta baguette
  • drizzle of olive oil
  • salt
    Bruschetta
  • 5 tomatoes, chopped and seeded (see note)
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 cup basil leaves, lightly chopped
    Whipped ricotta
  • 1 1/2 cups whole milk ricotta
  • 1/2 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp salt
  • pinch of black pepper
  • pinch of dried oregano

Instructions

  1. First, make the crostini. Preheat the oven to 375 degrees F and spray a large baking sheet with non-stick spray.
  2. Cut the ciabatta baguette into 1/2 inch slices. Drizzle with olive oil on both sides of each slice then sprinkle with salt. Add to the baking sheet in a single layer and bake for 8-10 minutes or until crispy and toasted. Keep in mind you don’t want them too hard. 
  3. Meanwhile, prep your bruschetta by combining the chopped tomatoes, garlic, salt, pepper, olive oil, balsamic vinegar, and basil in a medium mixing bowl. Set aside.
  4. Add all of the whipped ricotta ingredients in a medium mixing bowl and beat with a hand mixer until creamy and smooth. You can also use a food processor for this part.
  5. Add the whipped ricotta to a serving bowl and top with bruschetta. Serve with crostini and enjoy!

Notes

I like to use Campari tomatoes for this recipe, but Roma tomatoes would also be delicious!
