Chimichurri Steak Frites

Tender, grilled flank steak drizzled with chimichurri sauce with a side of crispy sweet potato fries!


This right here is the ideal Summertime meal! I marinated some Butcher Box flank steak and then popped it on the grill. I air fried my sweet potato fries, but of course you can bake them as well!

Chimichurri Steak Frites

Ingredients

Grilled Flank Steak

12 oz. flank steak

1/2 tsp chili powder

1/2 tsp paprika

2 tsp coconut sugar

juice of 1 lime

1 tbsp Worcestershire sauce

salt and pepper to taste

Chimichurri sauce (makes about 1/2 cup)

1/2 cup flat leaf parsley leaves

1/3 cup cilantro leaves

12 tsp red pepper flakes, or to taste

3 tsp minced garlic

1/4 cup olive oil

juice of 1 lime

1 tbsp red wine vinegar

salt and pepper to taste

Air Fried Sweet Potato Fries

1 large sweet potato cut into fries

12 tbsp olive oil

1 tsp ground mustard, optional

salt and pepper to taste


Instructions

For the Steak:
First marinade it – whisk together Worcestershire sauce, lime juice, chili powder, paprika, coconut sugar, salt and pepper. Top steak with sauce mixture, cover, and let marinate in the refrigerator for at least an hour. However, the longer the better (I aim for 4-6 hours)

When ready to eat – grill the marinated steak on medium-high heat for 4-5 minutes per side or until cooked to your liking.

For the chimichurri:
Combine all the ingredients in a food processor and process until well blended/combined. Taste and season more if needed. Add to an air tight container with lid and refrigerate until ready to use.

For the Fries:

Add cut fries to a bowl and cover with cold water. Let chill for 30 mins to 1 hour. This will make your fries extra cripsy!

Drain fries and combine with salt, pepper, garlic powder and olive oil.

Spray air fryer basket with non stick spray, spread fries in basket in an even layer. Cook at 380 degrees F for 16-18 minutes, tossing around half way through. Cook time depends on how big you cut your fries – so keep an eye on them. 

To serve:
When the steak is done being grilled let rest for a 7-10 minutes before cutting into slices.

Once the steak is sliced, drizzle with desired amount of chimichurri sauce. Serve with sweet potato fries!

Notes

*If you don’t have an air fryer – you can bake the fries on a parchment paper baking sheet in a single layer at 375 for 25-30 minutes, tossing them half way.
