These Mediterranean salmon bite bowls are loaded with rice, lemon pepper salmon bites, cucumber, tomatoes, tzatziki and lots of other delicious toppings!

I love using Trader Joe’s tzatziki and frozen brown rice to make this recipe even easier. These bowls would make for a nourishing lunch or weeknight dinner.

Greek Salmon Bite Bowls
- Yield: 2 servings
Lemon Pepper Salmon Bites
1 lb. salmon, center cut, skin removed, cut into bite size pieces
2 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon pepper seasoning
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp dried oregano
1 cup cooked brown rice
1 cup cherry tomatoes, halved or quartered
2 Persian cucumbers, sliced
1/3 cup crumbled feta cheese
olives of choice to taste
pickled red onions to taste, optional
2 scoops tzatziki
1 naan, cut into triangle pieces
2 tsp fresh dill, chopped
In a medium mixing bowl combine salmon, olive oil, lemon juice, lemon pepper seasoning, salt, garlic powder, and dried oregano. Toss to coat the salmon bites. Let marinate at room temperature for 15-20 minutes.
Spray a small sheet pan with olive oil spray and arrange the salmon bites in a single layer. Drizzle on any excess marinate left in the bowl. Bake at 425 degrees F for 8-10 minutes or until salmon bites are cooked through.
Assemble your bowls by adding rice, salmon bites, tomatoes, cucumber, feta, olives, pickled red onions, tzatziki, and dill. Squeeze on some lemon and enjoy!
