Mediterranean Chicken Bowls

These Mediterranean chicken bowls are loaded with brown rice, greens, hummus, tzatziki, feta and more. They make for the perfect lunch or dinner!

I love a good loaded bowl. These Mediterranean chicken bowls are made on repeat in our house. They’re satisfying, healthy and easy to whip. Also, you can meal prep these for an easy lunch. A lot of these ingredients you can buy at Trader Joe’s. Their tzatziki and hummus are great! I also love their marinated crumbled feta for these bowls.

Mediterranean Chicken Bowls


4 thin cut chicken breasts, boneless and skinless
salt to taste
1 tsp lemon pepper seasoning, or to taste
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp paprika
1/8 tsp dried thyme
6 tbsp olive oil, divided
1 cup cooked brown rice
1 cup spring mix
1 cup cherry tomatoes, halved or quartered
2 Persian cucumbers, sliced
1/4 cup crumbled feta
shelled pistachios, roughly chopped, to taste, optional
banana ring peppers to taste
green olives to taste
2 scoops of hummus
2 scoops of tzatziki
2 tsp chopped dill
3-4 lemon wedges


In a bowl combine salt, lemon pepper seasoning, garlic powder, oregano, paprika, dried thyme and 4 tbsp of olive oil. Mix well to combine. Add chicken. Add marinated chicken to a zip block bag and refrigerate for at least 30 minutes.

Add the remaining 2 tbsp of olive oil to a cast iron skillet or skillet of choice over medium heat. Once heated add chicken and cook on each side for 3-4 minutes or until chicken is cooked through and internal temperature is 165F. This will really depend on how thin your chicken is, I like mine very thin so it cooks on the quicker side.

Transfer chicken to a cutting board and let rest for 5 minutes before slicing.

Assemble bowls by adding rice, spring mix, chicken, tomatoes, cucumbers, feta, pistachios, banana rings, olives, hummus, tzatziki, and dill. Squeeze on some lemon and enjoy!
