This peach strawberry crumble for two is the perfect summer dessert!
Peach Strawberry Crumble For Two

Ingredients
Filling:
1 yellow peach, chopped
1 cup strawberries, chopped
1 tbsp lemon juice
zest of 1/2 a lemon
1 tbsp honey
1/4 tsp cinnamon
1/4 tsp pure vanilla extract
1/2 tbsp cornstarch
Oat topping:
1/4 cup old fashioned oats
1/3 cup all purpose flour
2 tbsp brown sugar
1/4 tsp salt
3 tbsp cold unsalted butter cut into small cubes
Toppings:
vanilla ice cream
caramel sauce
cinnamon
Instructions
Preheat the oven to 375 degrees F.
In a medium mixing bowl combine the filling ingredients. Mix well and set aside.
In a small to medium mixing bowl combine the oats, flour, brown sugar and salt. Add the cubed butter and mix with clean hands or a fork, pressing the mixture together.
Add the filling to a small baking dish. Add the crumble mixture on top.
Bake for 25-28 minutes or until bubbly and crumble topping is golden.
Top with vanilla ice cream, caramel sauce and cinnamon. Serve and enjoy!
