This easy shrimp salad recipe just requires shrimp, avocado, chile lime seasoning, frozen Mexican style roasted corn, and the southwestern chopped salad. Obviously everything is from Trader Joe’s.
I love the frozen Argentinian red shrimp. They’re the best frozen shrimp I’ve ever had. They almost have a lobster taste. I make a ton of recipes using them because they’re just too good!

A product I recently discovered at TJ’s is their frozen Mexican style street corn. It’s so good and makes life a little easier. It’s perfect for my street corn brussels sprouts recipe ! Or even just as a side dish with taco night. All you do is throw everything besides the cheese in a skillet and let it cook until it’s all melted. Throw the cheese on top and serve it! Easy as can be.
How to cook the shrimp?
I decided to cook my shrimp with the Chile lime seasoning. I always quickly defrost by shrimp by adding the shrimp to a colander and rinsing them with cold water until they’re thawed. Then, I pat them dry and season them with a pinch of sea salt. Then I add a little bit of the Chile lime seasoning on both sides of the shrimp. Another great seasoning would be their new Elote seasoning.
This shrimp salad recipe is perfect for week-night dinners or a quick and healthy lunch!

* the street corn and salad both come with cotija cheese. I personally only use the one portion and save the other for another time.
