Slow-cooker pepita salsa chicken tacos made easily using Trader Joe’s jar of pepita salsa and a handful of other delicious ingredients!
If you’re familiar with Trader Joe’s, you know they have a large variety of salsa! The pepita salsa is one of my new favorite salsas from there. It’s so good with plantain chips. It’s a little spicy and smokey. But, loaded with a ton of flavor. I knew I had to make some easy slow-cooker chicken tacos with it!
I’ve made slow-cooker salsa chicken tacos in the past. It’s one of the easiest ways to make tacos! Just throw a handful of ingredients in the slow-cooker and let it cook! The chicken always comes out so tender and perfect. Click here for the crock-pot I use to make these. I love the “keep warm” setting.
Also, it’s all about the toppings! For these slow-cooker pepita salsa chicken tacos I did shredded cotija cheese, pickled red onions, thinly sliced avocado, and chopped cilantro. Then some lime wedges for squeezing! Shredded pepper jack would also be a great cheese option.
How I make easy pickled red onions:
I slice half of a red onion then add it to a mason jar. Then I do 1 part red wine vinegar, 1 part apple cider vinegar, salt, pepper and 1 tbsp sugar or honey.
These slow-cooker pepita salsa chicken tacos would be great for a party! Just throw in the chicken and all the ingredients and let it cook on low for a few hours. Then you can do a self serve taco bar! If you need to serve a lot, just double the recipe!

Ingredients
Slow-Cooker Pepita Salsa Chicken
3 chicken breasts, about 1.8–2 lbs.
12 oz. jar of Trader Joe’s pepita salsa
4 oz. can diced green chiles, I like the fire roasted ones from Trader Joe’s
1 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
salt and pepper to taste
1/2 a lime, juiced
Tacos
tortillas
crumbled or shredded Cotija cheese
avocado slices, optional
chopped cilantro
pickled red onions
Instructions
Place chicken in the base of the slow-cooker.
Sprinkle with salt, pepper, chili powder, cumin and smoked paprika.
Add the salsa and diced green chiles.
Cook on low for about 5-6 hours or high 3-4 hours, the chicken should be fully cooked and easily shredded with a fork.
Remove from slow-cooker and shred with a fork, place back in the slow-cooker and mix with the sauce. Squeeze in lime juice and mix again.
Taste and adjust seasonings if need be.
Assemble tacos with toppings and enjoy!
