Ingredients

1 tbsp olive oil
3/4 cup yellow onion, chopped
1 lb ground beef
salt and pepper to taste
1 tbsp chili powder
1/2 tsp garlic powder
1 tsp smoked paprika
1 tsp ground cumin
1/4 tsp cayenne
4 oz diced green chiles
1 (15 oz) can pinto beans, drained and rinsed
1 cup corn kernels
14 oz red salsa from a jar
4 oz tortilla chips, about 1/2 of a large bag
1 cup shredded Mexican cheese blend, or more to taste
Toppings, optional but recommended:
chopped cilantro
pickled red onions
chopped tomatoes
sliced avocado or guacamole
sour cream
lime wedges


Instructions

In a large skillet with a tight fitting lid, add the olive oil over medium heat. Once heated, add the onion. Saute for 2-3 minutes.

Add the ground beef and season with salt and pepper. Cook until it is browned, crumbling it into small pieces as it cooks. Soak up any excess grease with a paper towel.

Add in chili powder, garlic powder, smoked paprika, cumin, and cayenne. Toss the meat to evenly coat. Add the diced chiles, beans, corn and salsa. Mix well. Let the mixture simmer for a few minutes.

Top the chips over the top of the mixture. You can lightly crumble the chips or leave them whole. Sprinkle on the shredded cheese. Cover with a lid and let cook for 2 minutes or until the cheese is melted.

Remove the pan from the heat and top with your desired toppings. Serve and enjoy.
