PrintSpicy Pomegranate Margaritas
- Yield: 2 drinks 1x
Ingredients
Jalapeno Simple Syrup
1 cup water
1 cup granulated sugar
1 sliced jalapeño, you can keep the seeds
Spicy Pomegranate Margaritas
cane sugar or salt for the rim
3 oz tequila, or to taste
1.5 oz Cointreau
6 oz pomegranate juice
2 oz jalapeño simple syrup, you can always add a little more but I suggest starting with this amount
Juice of 1/2 a lime
Optional garnishes: orange slices and pomegranate seeds
Instructions
First make your jalapeño simple syrup. In a small sauce pan add your water and granulated sugar. Bring to a boil.
Add the jalapeño slices and reduce to a low simmer for about 12-14 minutes, stirring occasionally. It should thicken a bit.
Strain to remove the jalapeño slices and add to an air tight jar with a lid. Once cool, refrigerate until ready to use. It will stay good in the fridge for about 2-3 weeks.
For the margaritas, prep your glasses by running a lime wedge on the rim of each. Dip into a shallow plate or bowl of cane sugar or salt to coat the rim. Add ice to your glasses.
In a cocktail shaker combine ice, tequila, Cointreau, pomegranate juice, jalapeño simple syrup and lime juice. Shake and pour into prepared glasses.
Garnish with orange slices and pomegranate seeds. Enjoy!
