Salmon Bites With Strawberry Mango Avocado Salsa

Ingredients

Coconut lime rice
I followed this recipe here

Air fryer salmon bites
1 lb. center cut salmon, cut into small bite size pieces
1 & 1/2 tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
2 tsp smoked paprika
1/4 tsp cayenne
1/4 tsp dried thyme
1/2 tsp salt
olive oil spray

Strawberry mango avocado salsa
1 cup strawberries, chopped into small pieces
1 ripe mango, chopped into small pieces
1 ripe avocado, pitted and diced
1 jalapeño, seeded and chopped into small pieces
2-3 tbsp chopped cilantro leaves
1/2 a lime, juiced


Instructions

First start by making your coconut lime rice. Recipe that I followed is linked here. I find this recipe to be really easy to follow.

While your rice is cooking, prep your salmon bites by adding them to a mixing bowl. Spritz them with a little bit of olive oil spray. In a small bowl combine the brown sugar and seasonings and mix well. Toss the seasoning blend over your salmon bites and toss so they are all coated.

Add your salmon bites to your air fryer and air fry at 400 degrees F for 6-8 minutes or until they are cooked through. If you don’t have an air fryer see notes for the skillet method.

While the salmon bites are cooking, prep your salsa by combining the strawberries, mango, avocado, jalapeño cilantro and lime in a medium mixing bowl. Mix well and set aside.

Serve your bowls by adding the coconut lime rice, salmon bites and top with the strawberry mango salsa.

Serve with some lime wedges if desired and enjoy!

Notes

* skillet method for the salmon bites:

Heat a large skillet over medium heat and add a little olive oil. Once heated, add the salmon pieces in a single layer. Cook for about 8-10 minutes, turning on each side so they are evenly cooked on all sides.
