Baked Old Bay Clam Dip

I really wanted to title this recipe “meemaw’s baked clam dip” because that’s what we call my mom as a joke. However, I knew she’d be mad so I resisted lol – anyway, this is a dip my mom has been making for years. Anyone who tries it, falls in love with it and begs my mom to make it for every party, bbq or holiday. It’s just so addicting. This is also a great recipe for football seasoning!

My favorite part is the little kick it has from the tabasco and old bay seasoning. It has a super flakey crisp topping thanks to the parmesan, but a super soft buttery inside.

All you need are chopped clams from a can, butter, onion, green bell pepper, garlic, dried oregano, old bay seasoning, tabasco, seasoned breadcrumbs, and grated parmesan. I was thinking of trying to do a “healthier” twist on this recipe, but some things you just can’t lighten up. This is one of them. Besides, when it comes to gatherings and spending time with friends & family.. it’s all about indulging in good food. In other words, this stuff is the real deal and will be gone in minutes, if not seconds 😉

Baked Old Bay Clam Dip


Ingredients

2 6.5 oz cans of chopped clams
4 oz. butter
1 onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 tsp dried oregano
3 tsp tabasco, or to taste
seasoned breadcrumbs* see instructions for amount
grated parmesan cheese, to taste
1/4 tsp old bay seasoning, plus more for topping
chopped chives, for topping


Instructions

Preheat the oven to 400 degrees F.

Heat the chopped clams with the juice in a small sauce pan.

In a large skillet – sauté onion, garlic, green bell pepper, oregano, old bay, tabasco and butter. Let cook until onion and peppers are softened, stirring it around frequently.

Add heated clams in juice to the skillet. Mix everything up.

Add seasoned breadcrumbs, a little at a time and stirring until it has a dip consistency.

Transfer to a 11 x 12 inch or 7 x 11 inch baking dish (the smaller size will just be a deeper dip)

Sprinkle with desired amount of parmesan cheese and about 1/4 tsp of old bay seasoning.

Bake for 20 minutes or until top is slightly browned.

Serve hot with crackers
