Creamy and delicious chicken salad with crumbled turkey bacon and fresh sliced tomatoes on top of lettuce wraps!
I never get sick of this low-carb meal – this is also great if you’re following a keto diet! I prefer uncured turkey bacon but you can use good ol’ regular bacon if that’s what you prefer. You get all the delicious flavors of a BLT with this meal – just without the bread, which I promise you won’t miss.
This is also great for meal-prep 🙂
PrintBLT Chicken Salad Lettuce Wraps
Ingredients
3 cups shredded cooked chicken, feel free to use rotisserie chicken
3/4 cup avocado oil mayo, or mayo of choice
2 tbsp dijon
1 tbsp lemon juice
1/4 tsp garlic powder
1/2 tsp paprika
salt and pepper to taste
2–3 small tomatoes, sliced
4 pieces of turkey bacon, cooked, crumbled or cut into smaller strips
lettuce cups, you can use romaine boats, iceberg cups, or butter leaves
chopped chives for topping, to taste
Instructions
In a medium bowl – combine chicken, mayo, dijon, lemon juice, crumbled turkey bacon (unless you’re leaving them as strips, then just add to lettuce wraps), garlic powder, paprika, salt and pepper. Mix everything together and refrigerate in an air-tight container until you are ready to eat.
When ready to eat assemble your lettuce cups and top with a few tomato slices and desired about of chicken salad.
