These creamy, zesty and refreshing key lime bars taste like a dream!
Seriously.. these are the perfect summer treat. They’re also gluten-free, dairy-free and refined sugar free! I recipe tested these about 3 times, the fails were even pretty good, I just didn’t like the way they looked. Finally, I got a delicious coconut key lime bar that’s also pretty! Food just tastes better when it looks good, right??
It’s hitting triple digits in temperature here in Austin.. so I’m not sure how much I’ll be baking these days. Honestly, it probably won’t stop me because baking = therapy. But, it’s going to be a loooong, hot summer with lots of easy, no oven involved recipes!
Coconut Key Lime Bars
Ingredients
Crust
- 1/4 cup coconut flour
- 1/4 cup coconut oil melted and cooled
- 1/3 cup unsweetened coconut flakes
- 1 egg
- 2 tbsp honey
- 1/4 tsp salt
Filling
- 1 lime zested
- 1/3 cup fresh lime juice should be 4-5 limes - but make sure to measure
- 4 eggs
- 2 tbsp coconut oil melted and cooled
- 2 tbsp coconut flour
- 1/4 cup honey
Instructions

Preheat the oven to 350 degrees F. Line an 8 inch baking pan/dish with parchment paper - folding the sides to fit the pan.

In a mixing bowl, combine the crust ingredients (wet then dry) - make sure everything is mixed and smooth. Press the crust dough with your hands evenly on the bottom of the prepared baking dish. Bake for about 10 minutes.

Meanwhile combine/whisk together the filling ingredients. Starting with the wet ingredients and then adding the dry. Pour over the baked crust and bake for 18-20 minutes or until its firm and no longer jiggly.

Let it cool and then refrigerate for 2-3 hours at least. Slice into 9 large bars or 12 smaller bars. Feel free to garnish with shredded coconut and lime zest.
