Quick and easy buffalo shrimp salad! Succulent shrimp tossed in buffalo sauce over butter lettuce with a handful of delicious toppings.
This time of year I crave all of the big salads. They’re super quick to throw together. Also, they don’t typically require much actual cooking. With that being said, in this heat sometimes we all need a break from cooking here and there.
This easy buffalo shrimp salad is almost identical to my healthy buffalo chicken finger salad. This is one of my favorite loaded salads to make. However, a shrimp alternative was just what I needed to change it up. Also, the shrimp makes the recipe even easier. No need to bread or bake anything!
I use store bought buffalo sauce in this recipe. Most grocery stores carry this. With the exception of Trader Joe’s unfortunately. This a great healthier buffalo sauce you can order through Thrive Market. I also find a lot that I like that either HEB or Whole Foods. However, it’s very easy to make your own. The toppings I used in this salad were some sliced cucumber, tomato, crumbled gorgonzola, sliced green onion, celery, and thin avocado slices. I used Trader Joe’s ranch dressing. However, feel free to use your favorite ranch dressing!

- Yield: 2 servings 1x
Ingredients
1 tbsp olive oil
1 lb. shrimp, peeled & deveined, defrosted if frozen
1/3 cup buffalo sauce, can add more if desired
10 oz. chopped butter lettuce
1 roma tomato, cut into small slices
1/3 English cucumber, halved and sliced
3 tbsp crumbled gorgonzola
2-3 stalks of celery, chopped
1 avocado, thinly sliced or cut into cubes
2 tbsp sliced green onion
salt and pepper to taste
3-4 tbsp ranch dressing
Instructions
Assemble salads by combining butter lettuce, tomato, cucumber, green onion, gorgonzola, celery, and avocado.
Heat a large skillet to medium high heat and add olive oil.
Seas0n shrimp with salt and pepper and add the the heated skillet.
Let cook about 2 minutes per side.
Add buffalo sauce, toss and let cook about 2 more minutes then remove from heat.
Add buffalo shrimp to the salad and serve with ranch dressing.
