This Fall chicken sausage sheet meal is loaded with sweet apple chicken sausage, brussels sprouts, cubed sweet potato, roasted apple and walnuts. Then topped with a honey mustard sauce. It makes for the best cozy and quick weeknight dinner this season!
One of my favorite sheet pan meals for this time of year is my Trader Joe’s sweet potato gnocchi sheet pan meal. I also love the vegetarian version which uses apples and nuts instead of chicken sausage. I wanted to marry the two together and make a version that doesn’t require Trader Joe’s ingredients. I love the sweet potato gnocchi. However, not everyone is close to a TJ’s store, myself included these days!

Ingredients
1 lb brussels sprouts, halved and trimmed
1 large sweet potato, peeled and cut into cubes
2.5 tbsp olive oil, divided
salt and pepper to taste
pinch of garlic powder
12 oz fully cooked apple chicken sausage, sliced
1 red apple, chopped
1/4 cup walnuts, roughly chopped
pinch of nutmeg and cinnamon
honey mustard sauce
2 tbsp olive oil
2 tbsp dijon
1 & 1/2 tbsp honey
1 tsp apple cider vinegar
salt to taste
Instructions
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper for an easier clean up.
In a medium mixing bowl combine brussels sprouts, sweet potato, 1-2 tbsp olive oil, salt, pepper and garlic powder. Mix well.
Add the coated and seasoned brussels sprouts and sweet potato to the baking sheet in a single layer. Add the sliced chicken sausage. Bake for 15 minutes.
While everything bakes, in a small to medium mixing bowl combine the apple, walnuts, 1/2 a tbsp of olive oil, nutmeg and cinnamon. Mix well.
Add the apple and walnuts to the baking sheet and bake for 8-10 more minutes.
Meanwhile, prep the honey mustard sauce by combining all of it’s ingredients in a small mixing bowl or mason jar. Taste and adjust if necessary.
Drizzle on desired amount of sauce on the sheet pan meal. Serve and enjoy!
