How did I come up for this delicious recipe for Mexican Street Corn Brussels Sprouts I hear you ask? Well, while I was in New Jersey for the holidays I was brainstorming some January recipe ideas. I realized there aren’t enough (if any) Mexican brussels sprouts recipes out there! Or at least none that I’m aware of. I discussed this with my mom and husband. We all thought combining Mexican street corn and crispy brussels sprouts would be a dream combo.

So, I quickly created this recipe and it did not disappoint. These flavors put together are phenomenal. The crispy Brussels sprouts with the creamy corn mixture topped with some cilantro and cotija cheese is hard to beat. I know a recipe is good when I cannot stop eating it. Which is what happened with this dish! This will definitely be a side-dish staple over here.

These Mexican Street Corn Brussels Sprouts are so easy to throw together. They’ll make the perfect veggie side dish along with any Mexican inspired meal, perhaps pairing them with my Cowboy Caviar Casserole [3], Crock-Pot Pineapple Salsa Chicken Tacos [4] or my Crockpot Creamy Chicken Taco Soup [5]!

How do you get the brussels sprouts super crispy?

I air fried my brussels sprouts like I always do. This gets them super crispy in less than 15 minutes. If you don’t have an air fryer, I suggest baking them! I’m all about getting them as crispy as possible.

Where can I find cotija cheese? Are there any good substitutes?

The cotija cheese makes this dish. You should be able to find this at any grocery store! I get mine at Trader Joe’s [6]. It’s so good and I can get a decent size block for under $4. I know some people use feta as a substitute and you can in a pinch, but it is worth seeking out the real thing.

I don’t have much time to make dinner, is there any way I can make this recipe quicker?

Yes! Grab the frozen Mexican street corn from Trader Joe’s! This way you don’t have make your own. They also have “Elote” seasoning which would be an amazing addition to this. Just a few ways to make this recipe even easier.

Roasted or air fried until charred, brussels sprouts are tossed with all the fixings of traditional Mexican street corn for a bright, vibrant and flavorful side dish everyone is guaranteed to love!

  • 1 lb. brussels sprouts, trimmed and halved (see note) 
  • 1 tbsp olive oil
  • salt and pepper
  • 1 (15 oz.) can corn, rinsed and drained
  • 2 tbsp mayo
  • 2 tbsp sour cream or plain Greek yogurt
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1 tbsp fresh lime juice
  • 23 tbsp chopped cilantro
  • 1/4 cup cotija cheese, grated

Instructions

  1. First, cook the brussels sprouts. In a bowl combine brussels sprouts with olive oil, salt and pepper. Air fry method – Add to air fryer basket and air fry at 380 degrees for 6 minutes. Toss then air fry another 4-7 minutes or until they’re crispy enough to your liking. Bake method – Preheat oven to 400 degrees F. Arrange them on a baking sheet in a single layer and bake for 18-20 minutes, or until they are crispy enough to your liking! Toss them half way.
  2. To make the street corn, heat the corn in a small saucepan over medium heat for a few minutes to warm up.
  3. Meanwhile, in a small bowl combine mayo, sour cream, salt, lime juice, chili powder and paprika. Mix to combine.
  4. Add the mayo/sour cream mixture to saucepan with the corn and mix. Let cook for about 2 more minutes, mixing frequently.
  5. Add the corn mixture to a bowl with crispy brussels sprouts. Toss together to lightly coat brussels sprouts.
  6. Top with cotija cheese, cilantro, and a couple lime wedges and enjoy!

Notes

If your Brussels Sprouts are very large you can always quarter them instead!
