Who doesn’t love a good one pan dinner? They’re life savers on busy week-nights. I usually stick to my same few recipes, but was craving something a little more comforting since it’s colder out. This cheesy and artichoke chicken combo is amazing. My favorite vegetable is brussel sprouts so I made sure to add those in there too 🙂

This recipe passes all the week-night dinner requirements.. it’s easy, minimal ingredients and delicious!

I used Trader Joe’s goat cheese log with herbs for this recipe! I highly recommend using a goat cheese with herbs to make it easier. You can also get plain and add your own herbs, but I believe most stores sell them already with the herbs added. It just makes it much simpler!

One Pan Cheesy Artichoke Chicken And Brussel Sprouts

5 thin sliced chicken breasts

1 14oz. can of artichoke hearts, drained and sliced into smaller pieces

1 15oz. log of goat cheese with fine herbs, I got mine at Trader Joe’s

2 tbsp fresh chopped parsley, optional

2 tsp minced garlic, divided

1 lb. brussel sprouts, trimmed and halved

12 tbsp olive oil

salt and pepper to taste


Instructions

Preheat the oven to 400 degrees F and line a large baking sheet with foil and spray with non-stick cooking spray.

Season chicken breasts with salt and pepper and line them up on one side of the prepared baking sheet.

In a bowl combine goat cheese, artichoke hearts, and 1 tsp of garlic. Evenly spread on top of each chicken breast.

In another bowl combine brussel sprouts, olive oil, salt, pepper, and the other tsp of garlic, add the brussel sprouts to the other side of the baking sheet in a single layer.

Bake for 30-35 minutes, or until brussel sprouts are crispy and chicken is cooked through. Make sure to check on everything to make sure it’s not burning.

Top with fresh chopped parsley if desired. Enjoy!
