Strawberry Whipped Ricotta Crostini

Strawberry whipped ricotta crostini with balsamic glaze and fresh basil make for the perfect little summertime appetizer!

You can make the whipped ricotta ahead of time and store in the fridge. Then just bake your crostini and assemble. Simple and so delicious. This one is a crowd pleaser.

Strawberry Whipped Ricotta Crostini

Ingredients

Scale

Whipped Ricotta
3/4 cup whole milk ricotta
1/2 tbsp olive oil
1 tsp honey
pinch of salt

Crostini
1 French bread or ciabatta baguette, cut into 1/2 inch slices
olive oil
pinch of salt

Toppings
sliced strawberries
2 basil leaves, sliced into ribbons
balsamic glaze to taste


Instructions

Preheat the oven to 375 degrees F.

First make the whipped ricotta by combining all of the ingredients in a medium mixing bowl. Mix with a hand mixer until smooth and has a “whipped” texture. You can also make it in a food processor. Cover and refrigerate until ready to use.

Place the sliced bread on a large baking sheet. Brush each side of each piece with a little olive oil. Sprinkle the top with salt. Bake for 15-18 minutes.

Top each crostini with a spoonful of whipped ricotta followed by 2-3 slices of strawberries. Drizzle with balsamic glaze and top with basil ribbons. Serve and enjoy!
