This sun dried tomato feta pasta is loaded with so many good flavors making it the perfect summer side dish!
Sun Dried Tomato Feta Pasta Salad
Ingredients
Dressing
1/3 cup + 2 tbsp olive oil
1/4 cup red wine vinegar
1 + 1/2 tbsp oil from sun dried tomato jar
juice of 1/2 a lemon
1 tbsp minced shallot
1 clove garlic, minced
1 tsp dijon
1 tsp Italian seasoning
salt and pepper to taste
Pasta Salad
10 oz cooked pasta, I used conchiglie but you can use any type of pasta that is similar in size
8.5 oz
1 (8.5 oz) jar of sundried tomatoes in oil, drained, and chopped into small pieces
1 orange bell pepper, finely chopped
2 cups cherry tomatoes, halved
2 Persian cucumbers, chopped
8 oz feta block, cut into small cubes or crumbled
1/3 cup sliced green olives, optional
2 tbsp chopped dill
Instructions
First make your dressing by adding all of the ingredients in a jar. Whisk together. Cover and refrigerate until ready to use.
In a large bowl combine all of the pasta salad ingredients.
Drizzle on desired amount of salad dressing. Toss to combine. Serve and enjoy!
