Juicy watermelon complimented by homemade balsamic vinaigrette, fresh cucumbers, ripe avocado, crisp almonds, savory feta, all on top of some arugula.. this is the freshest summer salad!
I’ve avoided watermelon in salad for as long as I could. I’ve seen it on quite a few restaurant menus and I just didn’t get it. A restaurant I used to work at had a watermelon, heirloom tomato, arugula, almond, sea salt & olive oil salad and everyone raved about it. Eventually, I caved and gave it a try. I think I ate it after every shift for the rest of that summer. Seriously, such a good combo! If you are freaked out about trying watermelon in a savory salad, please do yourself a favor, and try it!
But, this salad is also amazing! Watermelon and balsamic go so great together.
Ingredients:
Balsamic Vinaigrette
1/2 cup olive oil
1/3 cup balsamic vinegar
1 tsp minced garlic
1 tsp Dijon mustard
1 tsp honey
salt & pepper to taste
Salad-
1 cup of watermelon, cubed or in small balls
3 cups of arugula
1/2 avocado, sliced
1 tbsp sliced almonds
2 tbsp crumbled feta cheese (optional)
1/4 of a cucumber, sliced thin
Directions:
- First make the dressing, combine all ingredients in a bowl and whisk together. Place in an air tight jar and refrigerate.
- Place all the salad ingredients in a medium-large bowl. Top with 2 tbsp of salad dressing, toss, and serve immediately.
