Chili Lime Chicken With Pineapple Salsa

This recipe is a summer staple. It’s easy, fresh, and healthy!

My mom actually gave me this idea so I have to give her most of the credit. While I was visiting in New Jersey she made something similar and I loved it. When I came back home, this was the first thing I cooked, adding a few touches of my own.

This dish is a favorite for me because pineapple is probably my favorite fruit. I always eat it diced up with some grilled shrimp but I never thought of grilled chicken. The flavors are amazing. The sweet pineapple salsa really compliments the spicy marinated chicken. It tastes tropical and it’s very light, perfect for the hot weather.

Recipe – Serves 2

Ingredients:
Chili Lime Chicken-
4 thin boneless, skinless chicken breast
2 tbsp fresh lime juice
1 tbsp olive oil
1 tsp minced garlic
1 tsp chili powder – or to taste
1 tbsp fresh cilantro, chopped
1/4 tsp cumin
salt and pepper to taste

Pineapple Salsa-
1 cup pineapple, diced
1 cup roma tomatoes or red bell pepper (I’ve tried both!), diced
2 tbsp fresh cilantro, chopped
2 tbsp lime juice
1/4 cup red onion, finely chopped (optional)
salt and pepper to taste

Directions:

  1. First, season the chicken with salt, pepper, chili powder, and paprika.
  2. In a mixing bowl, whisk together lime juice, oil, garlic, and cilantro.. add chicken and marinate for at least 1 hour.
  3. In a small bowl mix together all of the pineapple salsa ingredients, mix well, and store in the fridge.
  4. Once the chicken is done marinating, start up the grill and grill the chicken until golden brown and cooked through.
  5. Top with desired amount of pineapple salsa and enjoy!
