Fresh watermelon juice is the perfect ingredient for your summer cocktails. Also, it’s so easy to make! All you need to do is blend some watermelon then strain it. Then you have a delicious cocktail mixer. I love watermelon juice in margaritas. However, I thought I’d change it up with these watermelon mojitos. I’ve been craving mojitos ever since we went to Florida. We drank so many there. The perfect pool or beach cocktail to sip on.
I love how this recipe only calls for a handful of ingredients. The combination of the sweet watermelon and mint is great for the summer heat here in Texas. I know we’ll be making these regularly this summer.

Ingredients
2 cups fresh watermelon, cut into cubes
8–10 mint leaves
2 tsp cane sugar
3–4 oz. white rum
Juice of 1 lime
Seltzer water to taste
Instructions
Blend the watermelon until it’s a smooth consistency.
Using a mesh strainer, strain the watermelon juice.
Add mint leaves and cane sugar to two glasses. Muddle.
Add ice, watermelon juice, rum, and lime juice. Top with desired amount of seltzer water.
Stir with a spoon then garnish with a lime.
