Juicy, baked chicken breast stuffed with crisp red apples and sharp cheddar cheese. All topped with a with a dijon garlic sauce.
This is such a cozy and delicious meal. The flavors really come together in this apple cheddar stuffed chicken dinner. The best part is it’s insanely simple. I love a good baked chicken dish because they’re so easy to throw together.

I just trimmed two large chicken breasts. Then I carefully cut a slit in the middle. After that I layered thinly sliced sharp cheddar cheese. Finally I placed the thinly sliced apple. I brushed on some olive oil on top of the and seasoned them with salt, pepper, and dried parsley.
While the chicken was baking I just combined all the dijon (click here for my favorite dijon) garlic sauce ingredients in a small sauce pan over medium-low heat, whisking frequently. When the chicken was done baking I just spooned the sauce on top. It was heavenly! This dish is great for Fall with the apple and cheddar flavors.

- Yield: 2 chicken breasts
Ingredients
Baked Apple Cheddar Chicken
2 chicken breasts, boneless and skinless
1 small apple, thinly sliced, I used Gala but any red apple will be fine
2-3 oz. thinly sliced sharp cheddar cheese (or 1/3 cup shredded.. I recommend the sliced)
1 tsp lemon juice
1/2 tsp dried parsley
1 tbsp olive oil
salt and pepper to taste
Dijon Garlic Sauce
1 tbsp olive oil
2 tbsp dijon
2 tsp apple cider vinegar
1 tbsp honey
1 tsp minced garlic
salt and pepper to taste
Instructions
Preheat the oven to 375 degrees F.
Combine sliced apple with lemon juice.
Carefully cut a slit in each chicken breast horizontally. Open up the sliced chicken and place sliced cheese in an even layer. Then top with sliced apple. Close the stuffed chickens and brush them with 1 tbsp olive oil then sprinkle with salt, pepper and dried parsley.
Place the the stuffed chicken breasts in a baking dish and bake for 28-32 minutes (cook time will depend on how thick your chicken breasts are), or until chicken is cooked through.
With about 10 minutes left of bake time for the chicken, begin to make your dijon sauce.
Combine all of the dijon garlic sauce ingredients in a small sauce pan and whisk together over medium low heat. Once the sauce starts to simmer, reduce heat to low and whisk frequently.
Spoon dijon garlic sauce on top of each chicken breast and serve immediately.. enjoy!
