Creamy pesto chicken salad wraps with juicy sliced tomato and lettuce makes for the best quick lunch that you can prep ahead of time!
Chicken salad is a week-day lunch savior! My husband and I have no problem eating it on repeat. We usually stick to a very basic recipe and do it on lettuce wraps, toast or Trader Joe’s new jicama wraps. However, I wanted to change it up a bit. That’s when these pesto chicken salad wraps were born.
The key to making this as easy as possible is using store bought pesto. Of course you can also make your own. It’s easy and if you have a recipe you love, why not!? But, I find some store bought pesto to be pretty delicious. That being said, I used Trader Joe’s kale, cashew and basil pesto. It’s delicious.
What you need for this recipe:
- Cooked chicken that is either shredded or cut into small pieces
- Mayo
- Pesto
- Lemon
- Romaine lettuce
- Tomato
- Garlic powder, salt and pepper
- Your favorite wraps, I used Tumaro’s brand, they’re healthy! I wish they sold these at Trader Joe’s. I get mine at Central Market.
The best part about these pesto chicken salad wraps is that you can prep them ahead of time. These are one of those no-fuss lunches. Super quick to throw together but also satisfying. Another favorite chicken salad recipe is my BLT chicken salad lettuce wraps.

- Yield: 2 wraps 1x
Ingredients
2 cups cooked chicken, cut into small pieces
1/4 cup Trader Joe’s kale cashew and basil pesto, or pesto of choice
1/3 cup mayo
1 tsp lemon juice
Pinch of garlic powder
Salt and pepper to taste
Tomato slices
1/4 cup chopped romaine lettuce
2 wraps, I used Tumaro’s
Instructions
In a mixing bowl combine chicken, pesto, mayo, lemon juice, garlic powder, salt and pepper.
Assemble wraps by adding the chicken salad to the middle followed by chopped romaine, and tomato slices.
Fold and slice wrap in half.
Repeat with the other wrap.
Cover and refrigerate until ready to eat or serve immediately.
