Tortellini With Roasted Red Pepper Sauce
- Yield: 3–4 servings 1x
Ingredients
10 oz tortellini, cooked according to package instructions
1 (16 oz) jar of roasted red peppers, drained and roughly chopped
1 tbsp tomato paste
1/3 cup vegetable stock
1 tbsp olive oil
1/4 cup finely diced yellow onion
2-3 garlic cloves, minced
1/2 tsp red pepper flakes, or more to taste
1/2 tsp salt
pinch of black pepper
1/2 cup heavy cream
1/4 cup grated parmesan
8 oz burrata
fresh chopped basil to taste
Instructions
In a blender or food processor combine roasted red peppers, tomato paste and vegetable stock. Set aside.
Add olive oil to a skillet over medium heat. Add onion and let cook for 4 minutes, stirring occasionally. Add garlic and red pepper flakes and cook about another minute, stirring frequently.
Add the roasted red pepper mixture to the skillet. Bring to a simmer and let cook for 5 minutes. Reduce heat to medium low and add salt, pepper, heavy cream and parmesan. Whisk together until smooth and combined. Toss in the tortellini and cook another 1-2 minutes.
Break apart the burrata balls and add to the tortellini. Top with fresh chopped basil and enjoy.

AMAZINg!! i Didn’t have heavy cream so used whole milk instead, and it was still absolutely delicious! So easy too!!!
