Apple cheddar chicken salad – a bed of spring mix topped with chicken, shaved cheddar, apple, pecans, crumbled turkey bacon and a honey dijon dressing!

This salad combination is one of my favorites! It’s like the salad version of my apple cheddar stuffed chicken. The juicy chicken, crisp sliced apple and shaved cheddar go so well together. Then add some pecans and chopped turkey bacon to give it some crunch!
What you’ll need for this recipe:
Chicken, spring mix, apple, cheddar cheese, pecans, turkey bacon, olive oil, apple cider vinegar, dijon, honey, garlic powder, salt and pepper!

You could also grill the chicken. I love grilled chicken on salads. If you want to keep it really easy, just buy a rotisserie chicken and use that! Then you have yourself a meal ready in no time.
I got fancy with the shaved cheddar cheese. I just used a vegetable peeler to shave it from a block. You can just chop yours into small pieces. For the apple I cut them into matchsticks. However, sliced or chopped works too! Either way it will be delicious!

Ingredients
Salad
1 lb. chicken breast, cooked and cut into pieces
4–5 cups spring mix
1 apple, chopped or cut into match sticks
3 oz. cheddar cheese, shaved or cut into cubes
1/3 cup pecans, roughly chopped
2 slices turkey bacon, cooked and crumbled
Dressing
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp dijon, or to taste
1 tsp honey
pinch of garlic powder
salt and pepper to taste
Instructions
First make your salad dressing by mixing all the ingredients in a small bowl. Taste and adjust if needed.
Assemble your salads by combining all of the ingredients.
Drizzle with desired amount of salad dressing and enjoy!
